Almond Pesto Pasta

INGREDIENTS

Ingredients for 2 servings

100 g organic Fairtrade cashew nuts
½ cauliflower
4 tbsp olive oil
paprika powder
300g pasta
1 onion
2 cloves of garlic
400g tinned tomatoes
2 tbsp tomato paste
10 dried tomatoes

PREPARATION

Pour water over the cashews and leave to soak for at least 3 hours.
Wash the cauliflower and cut into florets. Mix with 2 tbsp oil and paprika powder and bake at 220 degrees top/bottom heat for approx. 15 mins.
Cook the pasta al dente according to the packet instructions and remove 100 ml of the pasta water.
Chop the roughly dice the onion and garlic and blend in a food processor together with the drained cashews, tinned tomatoes, 5 sun-dried tomatoes, tomato purée and the pasta water.
Heat the sauce in a pan, add the pasta and cauliflower and enjoy!
