Monsieur Michel’s salad with orange vinagrette

INGREDIENTS

Salad (2 servings)

Baked beetroot

Vinaigrette dressing

Mixed green salad leaves
1 orange
1 avocado
1 carrot
50 g goat cheese
Salt and pepper to taste

PREPARATION

For the dressing: place all the ingredients into a jar and combine with a spoon.
For the baked beetroot: peel a beetroot, cut into cubes, place into a baking pan, add 1 tbsp olive oil salt & pepper to taste. Bake in the preheated to 200 C oven for 25-30 minutes until soft.
Assemble the salad: onto a salad place green salad leaves, baked beetroot, cubed avocado, carrot and orange slices and crumbled goat cheese. Spoon the dressing on top, add salt and pepper to taste and mix.
