INGREDIENTS

• 500 ml buttermilk at room temperature
• 2 large eggs at room temperature
• 30 g Aldi Bio Natura coconut oil at room temperature
• 150 g flour
• 50 g coconut flour
• 30 g sugar
• ¼ tsp salt
• 1 tsp baking powder
• ½ tsp baking soda
• 1 tsp vanilla extract

PREPARATION

In a large bowl whisk buttermilk, eggs, sugar, coconut oil and vanilla extract. In another bowl whisk flour, salt, baking powder and baking soda. Add mixed dry ingredients to wet ones, then add coconut flour and combine. Heat a frying pan on medium heat, grease with coconut oil, spoon 2 tablespoons of the batter and fry for about 2 minutes on both sides. Serve with fresh berries and maple syrup or any other topping of your taste.
