- 50 g Coop Naturaplan cocoa nibs
- 100 g Halba white chocolate
- 210g flour
- 1 teaspoon baking powder
- ¼ teaspoon baking soda
- ½ tsp teaspoon salt
- 190 g light brown sugar
- 110 g butter – melted
- 1 large egg at room temperature
- 1 tsp vanilla extract
- 50 g pecan nuts
PREPARATION
1. Preheat the oven to 180 C. Line a 20x20 cm baking pan with parchment paper.
2. In a bowl whisk together flour, baking powder, baking soda, and salt.
3. In a separate large bowl whisk brown sugar and melted butter. Add an egg and vanilla and whisk vigorously until the mixture is thick and pale. Alternatively, use a hand mixer to beat on medium speed for 2 minutes.
4. Add the dry ingredients to the wet mixture and combine with a spatula.
5. Chop pecan nuts and white chocolate and fold into the mixture.
6. Place the dough into the prepared baking pan and spread evenly. Sprinkle with cocoa nibs.
7. Bake for 30 minutes or until the edges are set and golden brown and a toothpick inserted into the center comes out clean. Let cool in the pan completely before cutting.
