- 1 medium Lidl Bio Fairtrade banana
- 1 large sweet potato (ca 250-270 g)
- 100 g cheese of your choice, grated – mixture of Cheddar and Gouda works well
- 2 large eggs at room temperature
- 70 g flour
- 40 g corn starch
- 1 tsp paprika powder
- 1 tsp garlic powder
- ½ tsp cumin
- Salt and pepper to taste
- Twig of parsley, finely chopped
- Vegetable oil for frying
PREPARATION
1. Peel and grate sweet potato. Grate cheese. Peel and mash banana. Finely chop parsley.
2. In a large bowl combine the ingredients: sweet potato, banana, cheese, eggs, flour, corn starch, spices, parsley, salt and pepper. Combine with a spoon.
3. Place a frying pan on medium heat, add vegetable oil. Spoon tablespoons of the mixture onto the heated pan and fry until golden brown for about 3-4 minutes. Flip onto the other side and fry to another 3-4 minutes.
4. For the sauce in a bowl combine crumbled feta, greek yoghurt and finely chopped chives.
5. Serve Fritters immediately with the sauce.
